Red: 90%, White - Sweet/Dessert: 6%, Red - Sweet/Dessert: <1%, White: <1%, Spirits: <1%, Red - Fortified: <1%, Rosé: <1%, other types: <1%The classical Chianti blend was created in the second half of the 19th century and consisted of 70% Sangiovese, 15% Canaiolo and 15% white varieties such as Malvasia Bianca. The wine was at best of decent, but not high, quality, and was traditionally bottled in the fiasco bottle.
Since the 1970s the amount of white grapes in Chianti have been reduced. The quality of Chianti wines was improved dramatically and some producers, like Antinori, decided to make a 100% Sangiovese wine. As a result, this "Villa Antinori" was not allowed to be called "Chianti" any more. The legislation changed in 1995 and it is now allowed to make 100% Sangiovese wines. Still many producers use a blend, nowadays up to 20% of Merlot, Cabernet Sauvignon or Syrah are allowed in the blend.
The central part of the region has some of the best terroir in the region and has its own DOCG: Chianti Classico. When young, the wines display spicy and floral tones and cherry, when aged hints of leather, nuts and tobacco emerge. The wines are usually medium-bodied with a good structure and acidity, making them excellent companions for the local dishes.
The subregions around the Classico regions have distinct characteristics. When the wines from these areas satisfy some strict rules, they can be called Chianti Superiore. In that case the individual region is not mentioned on the label.
