The domain philosophy is based on four axis : :

  • Respect the soil and the environnement
  • Reasonable and precious care of the vineyards
  • Vinification and elevage adapted to truly express the soil
  • Reasonable marketing

The disseminated structure of our domain (more than sixty parcels) allows us to research the best combination ground / soil / micro-climate. For example the whites and the Syrahs are preferably planted on sandy-limestone grounds and oriented north-east in order to preserve freshness, acidity and smoothness to those grape varieties. On the contrary, the mourvèdres are planted on clay-limestone pebbly grounds in order to obtain the best maturity level.
This diversity allows to bring a lot of complexity in assemblies, but also explains our differents vintages and in particular the very specials Chaupin, Les Garrigues, Terre d'Argile, Terre de Bussières. We produce 100 % Grenache vintages (Chaupin, Les Garrigues) on late soils because we think the Grenache can only reach its perfect balance on those cold soils. On warmer soils, his generous side needs to be balanced with the grape varieties (like syrah and mourvèdre). Finally, we think the Grenache really is the most interesting variety in Chateauneuf du Pape because it joins smoothness and power, and gives all their complexity to wines. The syrah and in particular the mourvèdre should only be used to balance the generous side of the Grenache. Also notice that the floral and fruity side of the syrah is interesting for wines to be drank younger, as are Côtes du Rhône and Vin de Pays.

The vineyards care is organised as to obtain the best maturity and grapes concentration but also the expression of the soil. For this reasons we work the ground with different ploughings (de-earthing, hoe weeding) in order to force roots to grow deep into the ground, and we execute several hours of green work like ripening of the grape, thinning out of leaves, green harvesting. Each of those processes is defined on case-to-case basis, parcel and year. Nothing is prealably fixed, everything is decided upon our observation of the vineyards. We also make a reasonable culture where we try to limit as much as possible the use of synthetic products, weedkillers and other chimical products.

 

The last step : vinification and elevage of wines.

All our harvest goes through two sortings : each harvester applies a first sort, then grapes are brought to a plate where a second sorting is executed by qualified employees managed by one of our family members (Isabelle, Christophe and Aimé). This second sorting offers several advantages :

  • Qualified employees make serious sorting
  • It allows us to really appreciate the grapes quality at the level of health, pips maturity, skins, stems and thus adapt the vinification (stems removal percentage, cold maceration, maceration length, must pressing frequency).
  • Based on the quality differences inside a same parcel, we will be able to vinificate in two different vats (for example differenciate the high and the low part of a parcel).
  • Finally, our physical presence in the vineyards during the harvest allows us to see the result of the year's work, the different experimentations we may have done and thus understand better our soils and vineyard life.

At the level of vinification, again nothing is fixed in advance. Each parcel, each vat is a different case where we adapt vinification depending on our observations during harvest and our daily tastings. However, we can define a general schema :

  • Partial removal of stems from 50 to 80 % depending on stems maturity
  • Cold pre-fermentation macération for 2 to 4 days on some granche parcels (mostly sandy soils)
  • Manual must pressing (for smooth extraction), usually once a day
  • Temperature control (28 to 32°C)
  • Very long maceration (3 to 4 weeks) for an optimum extraction of phenolic composites, tannins and all skin contained elements.
  • Separation of drip juice and pressing juice. Tasting will decide whether to reassemble them or not.
  • Some micro-oxygenation tries on Merlots as Vin de Pays and unballasting.

All those operations are realized depending on tasting and different feelings observed during vinification, in order to research concentration and soil expression through fruits and spices while avoiding over-extraction (not always easy !)
